Kabri is a meat that we prepare for big moments: parties or when family comes together. It is also present at religious ceremonies, especially in the Malabar tradition. For services, it is prepared to share with everyone.

ingredients
2lbs Goat
2 Red onions
4 Cloves of garlic
3 tomatoes
Thyme
Massalé pepper or spice blend (close to garam masala)
Salt
Turmeric
Curry leaves or bay leaves
Preparation
1. Cut the Goat in pieces, remove the fatty parts.
2. Wash the meat with a little vinegar or lemon
3. Rub well, after rinsing with clean water
4. Heat up the cauldron. When it’s hot, add a little oil. When the oil is hot, place the goat pieces in it with a little spoon of salt and brown until it has a nice color
5. Add sliced onions, let brown until golden.
6. Add crushed garlic, sliced tomatoes, thyme, turmeric, curry leaves, with a little masala. Cover, let reduce slowly
7. When tomatoes are cooked, add water until they are covered. Turn down the temperature and cover and let simmer slowly.
8. Taste your food, add salt with masala if needed. Let cook until meat is very tender and the sauce is thick.
advice
If meat is still a little hard, add a little bit of water, and let reduce.
Must eat with white rice, grains, with a good cucumber rougail.
